Range Relish
Appetizer
Ingredients:
- 1/4 Jar Texas Rib Rangers Range Relish
- 8oz block of cream cheese
Directions:
Warm cream cheese in microwave
and add Range relish. Mix thoroughly
and refrigerate until cold. Enjoy with
your favorite chips or pretzels!
Mexican Corn
Bread
Ingredients:
- 2 pkgs Corn Bread
- 3 eggs (well beaten)
- 1 1/2 cups of milk
- 1 tsp. baking soda
- 1tsp. salt
- 1 can cream style corn
- 1-2 tbsp Rib Ranger Relish
- 1 med onion (finely chopped)
- 1lb. grated cheese
- 2lb. ground beef
Southern
Cornbread
Ingredients:
- 1 1/2 cups cornmeal
- 1/2 tsp. baking soda
- 1 1/2 tsp. salt
- 1 tsp baking powder
- 2 eggs slightly beaten
- 1 1/4 cup buttermilk
- 2 tbsp. melted butter
- 1 tbsp. Rib Rangers Relish
Directions:
Mix first 7 ingredients and set
aside. In a 8X 10 pan, sprinkle a
thin layer of meat. Then
sprinkle cheese evenly over
meat. Sprinkle some chopped
onion next. Pour in part of the
batter. Repeat the second
layer. Pour remaining batter on
top. Bake for 45 - 50 min, or till
center is set at 350 degrees.
Mix dry ingredients. Beat eggs and
add to dry ingredients along with
buttermilk. Add butter and mix well.
fold in Range Relish. Pour into
greased, hot skillet. Bake at 450
degrees for 15 - 30 minutes. If using
an aluminum pan bake at 400 degrees
for 20 minutes. Let cool slightly before
removing from pan and serve.
Bananas Reuben
Ingredients:
- 4 firm - medium sized bananas
- whipped cream
- cinnamon
Corn
Pudding
Directions:
Put bananas on grill at medium heat or
in smoker at 275 degrees for 30
minutes. When blackened, place on
plate and slice down the middle. Use
aerosol can of whipped cream to spray
whipped cream along full length of
split. Sprinkle cinnamon on top.
Ingredients:
- 2 cups fresh, frozen or canned
corn
- 1 tbsp flour
- 3 tbsp sugar
- 1 tbsp salt
- 2 eggs
- 3/4 cup milk
- 2 tbsp butter, melted
Spinach Stuffed Yellow Squash

Directions:
Combine corn, flour, sugar, salt, eggs,
milk and butter in order listed in a large
bowl pour into a quart baking dish.
Place baking dish in a large pan of
water. Bake at 350 degree for 30 to 45
minutes or till heated through. May be
prepared ahead and baked when
needed. Yields: 4 to 6 servings.
Ingredients:
- 1 lb yellow squash, cut to (1 1/2
in lengths)
- 6 oz frozen spinach (thawed &
squeezed dry)
- 2 tbsp chopped onion
- 1 tsp minced garlic
- 1/2 cup bread crumbs
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 cup shredded provolone
cheese
- butter, melted
Broccoli
Casserole
Ingredients:
- 2 (10 oz packages frozen broccoli)
thawed & drained
- 2 to 3 cups shredded sharp
Cheddar cheese
- 1 can water chestnuts
- 6 tbsp margarine
- 2 tbsp flour
- 1/2 cup water
- 1/8 tsp onion salt
- 1/2 cup margarine, melted
- 1 sleeve saltine crackers, crushed
Directions:
remove seeds from center of each
squash length with a melon baller,
leaving the skin & outer pulp intact.
Combine the spinach, onion, garlic,
bread crumbs, salt, pepper and
cheese in a large bowl, mix well. Fill
each squash piece with the spinach
mixture. Drizzle with melted butter.
Arrange in a single layer in a baking
pan. Bake at 325 degree for 12
minutes or till cooked through. Yields:
Four Servings.
Directions:
in large bowl, beat eggs, add broccoli,
cheese and water chestnuts. Combine
6 tbsp margarine, flour, water and
onion salt in a saucepan. Cook till
sauce begins to thicken, stirring
constantly. Pour sauce over broccoli
and mix well. Pour into large greased
casserole or 2 smaller baking dishes.
Mix 1/2 cup margarine and cracker
crumbs in a bowl. Sprinkle over broccoli
mixture. Bake at 350 degree for 1 hour.
May be frozen after baking. Yield: 8
servings.
Spinach Artichoke Casserole

Ingredients:
- 1/2 cup butter
- 1 1/2 cup chopped onion
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 3 (10 oz) packages frozen
chopped spinach, thawed,
squeezed dry
- 1 tsp Worchestershire sauce
- 2 cans artichoke hearts,
drained, cut in quarters
- 8 oz cream cheese, softened
- 1/4 cup half & half
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp tabasco
- 8 oz Gruyere cheese, shredded
Directions:
melt butter in heavy skillet over medium
heat. Add onions, saute till translucent.
Add mushrooms and garlic, cook till
mushrooms release their liquid. Add
spinach & Worchestershire sauce, cook
till spinach loses its bright green color.
Stir in artichokes. Add cream cheese,
half & half, salt & pepper, cook till
cream cheese has melted.Stir in bread
crumbs and tabasco. Pour into a 6*8 in
casserole, sprinkle with Gruyere
cheese. Bake at 375 degree for 15
minutes or till top is golde brown.
